Table Wines: Alcohol levels 10-12% approximately. These wines are ready to drink within 4 weeks of bottling however they develop wonderfully with age and can be kept for several years. Although indicative sweetness levels are given, we recommend sweetening to taste as preferable.

White Wine Special: A very full-bodied white table wine, full of fruity flavours and a pleasing bouquet. A wine you could serve anyone, with any meal or just socially. Recommended for dry to medium, (0.990-1.000).

Medium White (Moselle style): This table wine is similar to the original German Moselle. This wine is an Ideal accompaniment to chicken or fish, or socially on its own. Served well chilled. Recommended for medium to medium sweet, (1.000-1.010).

Medium Dry White (Michaelsberger style): A table wine comparable to a commercial Piesporter. Serve well chilled. Usually slightly sweeter than a Moselle, Recommended for medium to medium sweet (1.003-1.008).

White Wine: This is a very versatile white wine, served chilled with or without a meal. Ideal dry wine, yet suitable for sweetening. Recommended for dry (0.990-0.995) or sweet (1.005-1.010). It will mature for 2-3 years.

White Country: This is a light crisp wine. Recommended for medium dry to medium sweet (0.997-1.005). Serve well chilled.

Rose: A very popular wine, drunk socially or with a meal. It should be served well chilled and can be matured for 2-3 years. Recommended for dry to medium sweet (0.990-1.005).

Red Wine: A very popular choice, this wine is a medium red and full of flavour. Serving temperature should be between 18 - 20 C. Recommended for dry to medium sweet (0.990-1.005).

Red Country Wine: A very light wine, it should be served well chilled unlike other red wines. Recommended for medium dry to medium sweet (0.997-1.005).

Red Wine Special: This is a superb full-bodied red wine full of flavour with a wonderful bouquet. Continues to improve with age. Recommended for dry to medium sweet (0.990-1.005).

Dessert and Aperitif Wines: Alcohol levels 11-17% approximately. These wines are ready to drink within 4 weeks of bottling however they develop wonderfully with age and can be kept for several years. Although indicative sweetness levels are given, we recommend sweetening to taste as preferable.

Red Ruby (Port style): Patience is rewarded with truly excellent results. The addition of Vodka, increasing the alcoholic content, together with a little Glycerine before bottling will achieve a Port very close to the commercial type. Excellent results when stored for 12-14 months, it can be kept 5 - 10 years. Recommended sweetness of 1.020-1.035. Serve your Port warm 16 -18 C.

Cherry Wine: Danish Cherry wine is famous for its unique taste. Served with ice or a frozen cherry, an excellent accompaniment to desert. The Cherry wine is unaffected by the addition of Vodka. Your Cherry wine will benefit greatly if kept for 12-15 months or even longer. Serve it well chilled. Recommended sweetness of 1.035-1.050.

Vermouth Bianco: A lovely aperitif, made with the best Italian Herbs from Torina. Slightly fortified, it can mature for 5-8 years. Serve it well chilled with ice cubes or a frozen slice of lemon. Recommended for dry (0.995-1.005) or sweet (1.010-1.030).

Rich Golden (Sherry style): Following a sufficient maturation period, 12 - 18 months, the wine becomes almost Oloroso in style, and can be kept for 5 - 10 years. Try adding some Vodka, glycerine or even commercial sherry to increase alcohol content, mouth feel, and flavour. Recommended sweetness 1.020-1.035, alternatively it can be left dry.

Rich Tawny (Madeira style): A very full-bodied wine full of wonderful flavours. Mature for a year, it can be kept for 5-10 years. Recommended sweetness 1.020-1.040.

lackcurrant (Kir): Originated in France now popular throughout Europe. Excellent chilled in the summer, serve as an aperitif in winter. Dip the rim of the glass in egg white then in castor sugar, add a slice of lemon to the rim, drink well chilled. Improves with keeping 2-3 months, it can be kept for 3-5 years. Recommended sweetness 1.020-1.045.

Vermouth Special: A fuller flavoured, fuller bodied vermouth. It is an excellent aperitif and can be served with lemonade or tonic as a long drink. Very refreshing in the long hot summer days. Recommended sweetness 1.005 -1.020. It can be stored for 5 - 8 years.

Vermouth Rose: Colourful wine with a wonderful taste. Serve on its own, with ice and lemon, or with tonic. Pronounced flavours when well chilled. Recommended sweetness 1.005 -1.035 for dry or sweet.

Bitter Aperitif (Camparillo style): This is similar to the Italian Herb Wines such as Campari and should be served with Tonic and ice cubes with a slice of lemon. Recommended sweetness 1.000-1.010.

Ginger Wine: A touch of spice gives versatility, a drink for the cold winter nights, but excellent in the summer when added to dry ginger for a long drink. Add to whisky for a Highland Fling. Recommended sweetness 1.025-1.045.

Peach Melba: Lovely colour and flavour, wonderful for parties and barbecues. Serve on its own or with tonic and ice as a long drink. Recommended sweetness 1.025-1.040.

Sweet Brown (Malaga style): A sweet brown dessert wine of the Mediterranean. This wine can be kept and stored for 5 - 8 years. Recommended sweetness 1.025-1045.

Rich Herb Dessert (Marsala style): Originally from Sicily this wine has a wonderful taste thanks to Sicilian Marsala herbs, ideal for people who know something about wine. Serve it chilled. It can be matured for 5 - 8 years. Recommended sweetness 1.035-1.045.

Muscatier (Muscatel style): A truly excellent wine, serve it any place, any time, but well chilled. Can be kept 5 - 8 years. Recommended sweetness 1.025-1.045.

White Dessert (White Port style): A lovely white, port style wine. Add some Vodka or some commercial white port to give it an extra kick. It can be served with lemonade or ice cubes or both and can be kept 5 - 8 years. Recommended sweetness 1.020-1.035.

Grand Rich Dessert (Walnut Sherry style): Rich in flavour, a darker wine than the Oloroso style which benefits greatly from a long maturation period. This wine has lovely lingering taste of dry walnut. Recommended sweetness 1.010-1.035.

Tropical Sunset: A blend of exotic fruits gives this wine the name it deserves. Perfect for long summers of barbecues and out-door parties. Serve chilled on its own or with ice and lemonade, excellent base for punch. Recommended sweetness 1.020-1.045.

Sangria: A reminder of warm Spanish holidays. Serve it with chopped fruit in the glass. Recommended sweetness 1.020-1.040.

Papaya Paradiso: A refreshing taste of exotic mixed fruit bringing a host of exciting flavours of the Southern Hemisphere. Another variety for a party punch or summertime barbecues. Recommended sweetness 1.025-1.045.

Apricot Aperitif: Apricot Aperitif is just a delight, the taste is clean because real fruit flakes are used. Serve it well chilled as an Aperitif or with tonic for a long drink. Recommended sweetness 1.030-1.040. It can be kept for 5 - 8 years.

Plum Aperitif: This Aperitif can be drunk any time of year. Serve chilled. It can be kept 5 - 8 years. Recommended sweetness 1.030-1.050.

Strawberry Aperitif: Lovely flavour of strawberries, enjoy it with a frozen strawberry instead of ice cubes. Try it poured over strawberries and cream. Serve well chilled. Recommended sweetness 1.035-1.045.

Kiwi Aperitif: Made with beautifully exotic fruits such as kiwi and mango makes this Aperitif something special. Enjoy it ice-cold, with crushed ice or with orange juice, or as a long drink with tonic and a dash of Rum, Pernod or Vodka. Place a slice of Kiwi in the glass. It can be kept for 5 - 8 years. Recommended sweetness 1.025-1.040.

Coconut Aperitif: Lovely unusual taste and colour (crystal clear). Serve it with a slice of lemon and well chilled. It can be matured for 5 - 8 years. Recommended sweetness 1.025-1.040.

Orange Aperitif: An aperitif to be served well chilled with ice and a frozen slice of orange for decoration. It can also be served as a long drink with fresh orange, lovely for barbecues. Recommended sweetness 1.010-1.030.

Apple Aperitif: Try it with some apple juice and ice cubes. It can be matured 5 - 8 years. Recommended sweetness 1.030-1.045.
