For those of you who want a little more involvement in their beer making here's a recipe to try.

London Road Bitter OG 1040

To make 40 pints you will require 3kg Light Malt Extract, 60 gm East Kent Goldings Hops, Ale Yeast, Beer Brite (barrel only), Light spray malt for priming (optional).

Using a minimum 8 pint saucepan (5 litres) bring 4 pints (2 litres) of water to the boil. Add approximately 250gm of the light malt extract and stir until dissolved. Continue the boil with the addition of 40gm of the East Kent Goldings hops in a bag for 30 minutes. At the end of the 30 minutes add another 15gm of the East Kent Goldings hops in another bag and continue the boil for a further 15 minutes. Switch off the heat and remove the two bags of hops from the wort. Stir in 5gm of the East Kent Goldings, followed by the remaining light malt extract, ensuring the extract is fully dissolved. Place 3 gallons (15 litres) of cold water into a 5 gallon (22 litre) fermenting bin, pour the hot wort carefully into the fermenting bin, toping up with additional cold water to bring the total volume to 5 gallons (22 litres). Using a thermometer ensure the temperature is no higher than 25°C. before you add the ale yeast. Stir in the yeast for 30 seconds and allow the wort to ferment for 7 days. The finishing gravity should be around 1008, using your hydrometer confirm the gravity has remained the same for 2 days before bottling or barrelling your London Road Bitter. Priming sugar (preferably light spray malt) should be added to the bottles at a rate of ½ level teaspoon per pint or 3 dessert spoons per barrel together with the Beer Brite (barrel only). Tip 1: aerate wort prior to pitching the yeast. Tip 2: use a kettle to bring your water to the boil.
